The Diet...and at least one New Year's Resolution

Well, I'm starting to shed the pounds again, which is a good thing. I think more than anything, the key to success is having the right frame of mind. I'm in a place where I'm definitely willing to make the sacrifices needed to get back to where I want to be. And I'm doing it partly through doing something I enjoy: cooking, and cooking a lot of different things.

Last night I made jerk chicken skewers with a cucumber dipping sauce, which is one of my favorite all-time recipes.

Tonight, I made cumin grilled scallops with a lime, avocado and raspberry vinaigrette. It was very, very tasty, and if this is diet food, I'm home free!

The last time I low-carbed it, I ate tons and tons of steak, and a roast chicken now and again. I need variety, and so I'm going to explore all manner of protein. I've got ahi tuna in the freezer too. I've been grilling that quite often, and it's very tasty. Shrimp, crawfish, all kinds of fish, oysters, mussels, duck, turkey and plenty of sausages and such are all going to be explored. I'm fortunate to live within five minutes of two amazing meat shops that have all manner of smoked goodies that I can have on hand for the late night munchies. And the veggies to have are some of my favorites: broccoli and cauliflower.

I should be on track for this month towards losing my goal of ten pounds. We're not quite half way through the month, and I'm already over half way there. I might even break the fifteen lb. mark...we shall see. Regardless, I'm going in the right direction.
