I've been circling around the final target for my cake entry ever since I returned from California and it's down to one of four possibilities. There are two basic cakes, where the flavor and proportions are the same for each set of two. The first set uses 8 oz. of Guinness, while the second set uses a full bottle, or 12 oz. The variable that adds another level is the use of regular cocoa or Dutch processed cocoa, which brings me to the possibilities of four cakes. The final variable is the type of pan. I have three different styles, and I'm going to see which one produces the least amount of cracking.
I'm in the middle of baking the first set that uses only 8 oz. of Guinness. One cake's in the oven, and I'm prepping the other one as I type this. When I'm done, I'm going to be putting these cakes in the freezer, then doing the same thing tomorrow with the two possibilities that use a full bottle of beer. After that, I'll be taking them to my friends and family for taste testing.
Then there's the pumpkin cake, which I think might be my favorite of the two. I think after tonight, I may just have my entry for that one. That one has come together quite quickly, and I'm pretty pleased with it.
It's looking like another three cake day.
