A New Cookie

I just took a break from watching a movie to whip a new cookie recipe. I kept mulling it over in my head while the movie was playing, and I just had to give it a go, so I took about 20 minutes or so to try my hand at something new.

I think it's going to be the consistency of a spritz cookie and I'll be able to use a spritz machine, which is a heck of a lot easier than rolling out dough. It's got some lime juice in it, along with some coconut, and just a hint of almond extract, since I thought that would add a nice counterpoint to the coconut, and if the dough is any indication, I'm right. I'm going to let it firm up over night in the fridge and then back a batch first thing in the morning.

I couldn't stop eating the dough, and that's always a good sign. I'll let you know how it turns out.

WHERE were those cookies TODAY?

Well, I couldn't really bike over to Torey's with two dozen cookies in my hands...and besides, I would have had to have gotten up earlier in the day to bake 'em. They're going to be going into the oven tonight, and on your table tomorrow for the 4th! Along with a three berry tart and a sample of my guava cake. It's a bit different, but David seemed to like it, so we'll see.
